The first thing to try is resetting your user profile. I haven't used Windows 11, but on Windows 10, after closing OpenOffice, open any folder and enter %appdata%\OpenOffice in the address bar near the top. This will take you to a folder containing a folder named user. Rename that to user_old. Restart OpenOffice and see if it is stable.
If that does not work, try starting Windows 11 in Safe Mode. You can find instructions on the web of how to do that. Once you are in safe mode, run OpenOffice long enough to convince yourself, or not, that it is stable.
