There are some confusing things in your description of the problem. Please provide some more detail. In particular:
What did you do to try to open all the word documents with OpenOffice?
When you say "word" documents, do you mean documents saved in the .doc format or are these word processor documents saved as .odt files?
What exactly happens that tells you that some files open as PDF files. The PDF format is completely different than any word processor file format.
It may help you understand what format your files are in if you display the file extensions in the file names. I don't have Windows 11. On WIndows 10, I can turn on the display of the file extensions by clicking on the View tab of a folder and then selecting the box labeled "File name extensions".
